Lazy Blueberry Bread

 

I am an inherently lazy person. Who loves to eat.

This morning, I wanted something sweet and delicious, that was easy enough  to whip up without having to leave my pyjamas. So, Lazy Blueberry Bread was born. Basically I just threw together things that I had laying around the kitchen and hoped for the best. Which frankly, is the perfect attitude for a Saturday morning.

P.S. Ingredients here are more slap dash than usual, I’ll blame the fact I started this before my first cup of coffee. But we’re essentially looking for a cake-batter consistency that tastes good.

Ingredients

100g butter

200g sugar

2 eggs

250g flour

pinch of salt

1 tsp baking powder

100 ml milk

50g/ 1/2 punnet blueberries

1 lemon

Cream

Method

Preheat your oven to 220 degrees (Celsius), and oil and paper a bread tin or baking dish.

Combine dry ingredients. Melt the butter and beat in eggs and sugar, then fold into the dry ingredients, stir until combined.

To the batter, add the rind of one lemon, and the juice of half. Then stir through the blueberries – ideally do what I forgot to and powder the berries in flour before adding. This will help them distribute better, unlike mine. haha.

Bake for around 40 minutes or until a knife comes out clean from it.

 

Serve with cream, coffee and a good book.
